Swiss research shows half of potatoes wasted between farm and fork
Scientists investigating food waste have found that potatoes are wasted disproportionately often and at a number of points along the supply chain. Researchers from ETH Zurich’s research institute Agroscope estimate that half of all potatoes are wasted between farm and fork. The UN Food and Agriculture Organisation has estimated that, worldwide, between a third and one half of all food produced is wasted before it can be consumed; potatoes seem to be amongst the most commonly wasted food items.
